70 ml hot water (ideally at 70°C - 80°C)

Instructions:

Preheat & Prepare: Pour a small amount of hot water into your matcha bowl to warm it. Then, discard the water and dry the bowl thoroughly.

Sift for Perfection: Using your chashaku, measure 1.5-2 scoops of matcha into the sifter held over the bowl. Sift the powder to remove any tiny clumps. This is the secret to an incredibly smooth texture.

Add Water: Pour the 70 ml of hot water (70-80°C) over the matcha powder. Using water that is too hot will burn the leaves and create bitterness.

Whisk with Intention:

Hold the rim of the bowl steady with one hand.

With the other, grip the chasen lightly and whisk briskly in a gentle "M" or "W" shaped motion, ensuring the tines of the whisk touch the bottom of the bowl. The goal is to aerate the tea, not just mix it.

Continue for about 15-30 seconds, until a layer of fine, velvety microfoam with tiny bubbles covers the entire surface.

Savour Immediately: Enjoy your matcha right after whisking, before the powder has a chance to settle. In three mindful sips, appreciate the vibrant colour, the aromatic fragrance, and the complex, smooth flavour.
A Note on the Ceremonial Experience:

Water Temperature is Key: Boiling water is the enemy of fine matcha. Let your kettle sit for 1-2 minutes after boiling to reach the perfect 70-80°C range. This preserves the sweet umami and prevents a bitter taste.
